Spicy Cucumber Salad (오이 무침)-

Easy, fast and delicious Banchan (side dish), Oi Muchim! Oi means cucumber, and muchim means mixing. This Korean cucumber salad is an excellent complement to any of your main dishes, especially Korean BBQ!

Recipe

  1. Thinly slice cucumber and sweet onion.
  2. Chop scallion.
  3. Make the sauce. In a small bowl, add sliced onion, 1Tbsp Korean chili powder,  3 Tbsp soy sauce, 2 Tbsp agave, 1/2 Tbsp minced garlic, 1 Tbsp rice vinegar, chopped scallion, 1Tbsp sesame oil and 1/2 Tbsp sesame seed.
  4. mix well the sauce.
  5. Combine the sauce and sliced cucumber well.
  6. Garnish with sesame seed.   


Ingredients

  • English cucumber 1 or 2-3 Persian cucumber, thinly sliced
  • 1/2 sweet onion, thinly sliced
  • 1 scallion, chopped
  • 1 Tbsp Korean chili powder, gochugaru
  • 3 Tbsp soy sauce
  • 2 Tbsp Agave
  • 1/2 Tbsp garlic, minced
  • 1 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1/2 Tbsp toasted sesame seed and little more for garnish

Helpful Tips

You can enjoy the Oi-muchim right after you make it, but for better taste wait to 10 minutes.  You can keep this for 5 days in a refrigerator.
