This is my holiday recipe for family get togethers. Kimchi helps cut the fatty meats and add more flavor into the roast. This is an easy recipe for feeding a large number of people.
Eat with steamed rice or mashed potato.
Instructions
1. Clean all ingredients and preheat 300 degree F.
2. Cut onion & garlic into half, carrots into 2" pieces and trim bad parts of potatoes.
3. Trim the chuck roast and cut it into big pieces. It's ok to use whole piece.(it takes little long to roast)
4. Heat the oil in an oven safe pot over medium heat. Add the half onions and garlics to the pot, browning them.
5. Throw the carrots and potato into the same hot pot and toss them around a bit until slightly browned.
6. Remove the vegetables and set aside.
7. Generously salt and pepper the meat. If needed, add more oil to the hot pot. Place the meat in the pot and sear it until it is nice and brown all over. Remove the roast to a plate.
8. Deglaze the pot with red wine, and scrap the bottom well.
9. Put the meats, vegetables and mushrooms in the pot. Add Kimchi and Kimchi juice on top of them. Add sugar, if kimchi is too sour.
10. Add enough beef stock to cover the meat halfway.
11. Put the lid on, then roast in in the oven for 3 hours until it's fall-apart tender.
-2-2.5 pound chuck roast
-2 Tbsp oil
-1 whole onion, peeled and halved
-1 whole garlic, halved
-2-3 whole carrots, peeled, cut into 2 inch pieces
-10 mini portobello mushroom
or white mushroom
-5-7 white potatoes, cleaned and halved
-1/2 C red wine
-1 1/2 C - 2 C beef broth, to cover the ingredients
-1/4 head Kimchi or 2 C Kimchi
-Salt & pepper, seasoned beef
- 1/2 Tbsp Sugar (optional)
30 minutes - 1 hour
3 hours
4 hours
3-4 people
Using old kimchi is better for flavor.
If kimchi is too sour, add 1/2 Tbsp of sugar.
