Kimchi Fried rice with bacon김치볶음밥

This is the most popular ways to use old kimchi along with kimchi stew and kimchi pancake. These crunchy, tangy and mild spicy kimchi brings instant complex flavor and bacon gives nice smoky flavor. 

Recipe

1. prepare the vegetables and bacon

  • Chop onion and scallion
  • small dice carrot 
  • cut bacon into thumbnail size pieces of smaller
  • cut kimchi with a scissor (it's much easier and cleaner)

2. In a large frying pan over medium-high heat, warm 2 Tbsp oil until hot but not smoking,  Add scallion and onion, cook and stir occasionally, until it starts to sizzle about 2 minute.

3. Add Bacon and stir it well until half of it is cooked.

4. Add carrot and stir well until starting soften.

5. Add Kimchi and sugar, and sauté well until slightly turned into brown. (80% cooked)

6. Bring the rice the corner of the friying pan and add soy sauce on the other side. boil the soy sauce about 1 minute.

7. Add rice and break up the rice in the pan with spatula, and stir it to incorporate. Turn th heat to medium heat. Stir it and mix it well with all the ingredients.

8. Place a small nonstick pan over medium-high heat, and add the vegetable oil.

When it is hot, add eggs, season with salt and fry to your desired doneness.

9. Serve rice topped with fried egg, sesame seed and roasted seaweed.

Ingredients


  • 1C Chopped Kimchi
  • 2 stalks of scallion (thinly slice)
  • 1/4C Diced carrot
  • 1/6 onion (diced)
  • 1 tsp Sugar
  • 1 Tbsp Korean chili powder (option)
  • 3 strips of bacon (5 oz)
  • 3C Steamed white rice - if it's freshly cooked, leave it out for 10 minutes to cool down
  • 2 Tbsp soy sauce
  • 1/2 Tbsp sesame oil
  •  Toasted sesame seed for garnish
  • Roasted seasoned seaweed (shredded ) for garnish
  • 2 Tbsp cooking oil
  • 2 eggs
  • salt and pepper to taste

Use leftover steamed rice. It's better  and easier to make fried rice. if you don't have it, just make the rice intentionally drier by adding slightly less water when you cook the rice.
