JANCHI GUKSU ( 잔치국수 )-

Recipe

  1. 30 minutes before, start making seafood broth.
  2. Put soup ingredients without soy sauce into cold water.
  3. Simmer the broth 15minutes, and bring up to boil for 5 minute.
  4. Remove Kelp and onion skin.
  5. Reduce heat to low and simmer for 15 minute. 
  6. In a medium bowl mix all of the ingredients for the 'Seasoning Sauce' together and set aside.
  7. Julienne the onion, zucchini, carrots, and shiitake mushrooms.
  8. Beat the eggs in a small separate bowl.
  9. Preheat a non-stick skillet or pan over medium low heat. Add some cooking oil and spread it evenly around the pan. 
  10. When the pan is warm add the beaten eggs and cook it like an egg omelet (do not add the vegetables to the omelet). 
  11. Once both sides are cooked, transfer the egg omelet to the cutting board. Gently fold / roll up the egg omelet and thinly slice it. Place the egg to the side.
  12. Wipe the pan (from step 3) clean with a paper towel add a small amount of cooking oil and heat over medium heat. 
  13. Add the zucchini and a pinch of fine sea salt and stir until the zucchini is lightly cooked (1 to 2 mins). Place to the side.
  14. Repeat step seven with the carrots, onion, and shiitake mushrooms individually. Set each vegetable to the side once done. Cook the carrots at the end.
  15. In a sauce pan or small pot bring the Korean seafood broth and 1Tbsp of soy sauce to boil over medium to medium-high heat until you are ready to serve the noodles.
  16. In a separate pot heat the water until it's in a rolling boil. Cook the noodles according to package instructions. Once cooked drain the water and run the noodles under cold water briefly to stop them from over-cooking.
  17. Serve the noodles into a soup bowl (you may want to use tongs if the noodles are still hot) and garnish with the egg, all cooked vegetables and crushed gim. Add the boiled stock (from step 10). Serve immediately. Add the seasoning sauce from step nine to taste.


"This is Korean noodle soup with various garnishes. The word 'Janchi 잔치' means feast in Korean. As its name suggest, it is a food that was eaten at wedding and special birthdays in the past. When you make this noodle, I imagine the whole family gathering together. Make Janchi Guksu and enjoy it with your loved ones."

Ingredients

For seafood broth-

  • 600 ml water
  • Kelp 6"X6" about 7g
  • 10 dried anchovies
  • 1-2 onion skin
  • 3 Green onion stems
  • 2 garlic cloves
  • 1 Tbsp soy sauce for soup
  • Salt and pepper for taste

For Main-

  • 180 g Somen noodles (6.3 ounces)
  • 2 Eggs
  • 1/2 Zucchini
  • 1/2 Carrots
  • Pinch Fine sea salt
  • 1 Tbsp. Regular soy sauce or fish sauce 
  • 1/4 Onion
  • 2 Shiitake mushrooms
  • Salt and pepper for taste
  • Gim (also known as Nori)

For Seasoning Sauce-

  • 4 Tbsp. Regular soy sauce
  • 1 Tbsp. Sesame oil
  • 1 Tbsp. Minced Garlic
  • 1 Tbsp. Gochugaru (Korean chili flakes) optional
  • 1 Tbsp. Chopped Korean pepper (optional)
  • 1 Tbsp. Korean chives or chives or green onion, finely chopped.
  • 1 Tbsp. Sesame seeds

Gim is a type of seaweed snack often sold in snack packs of six or more. Also great with rice and saam jang. 

In Korean market, there are various kinds of soy sauce. If you don't have soup soy sauce, season more after taste.
