Hoedeopbap, Raw fish rice bowl(회덮밥)-

Hoe=raw fish, deopbap=over rice

Sashimi lovers will fall all over the delicious Korean sashimi rice bowl with fresh vegetable and sweet and spicy Gochujang sauce. Like Bibimbap, you mix in the sauce and combine everything together into a one-bowl meal.  

Recipe

  1. Before you start to prepare the bowl, cook rice.
  2. Make the Gochujang sauce. Whisk all of the ingredients in a small bowl. Keep it in refrigerator at least 30 minute.
  3. Slice all the perilla leaves, lettuce, cucumber and carrot. Spring mix is okay to use it with out cutting.
  4. For raw fish, cut as big dices or slice thinly. Get sashimi grade fish in asian market. If you get frozen one, let it thaw in refrigerator a day before.
  5. When all ingredients are ready, put rice on the bottom. Add vegetables and fish on top of rice. Drizzle the Gochujang sauce on top.
  6. Mix well and enjoy the Hoedeopbap!



"You can make a quick vegetarian version of this by substituting the fish with fried tofu or cooked tofu. Also you can use tuna can instead of raw fish."

Ingredients

For the Gochujang sauce

  • 5 Tbsp Gochujang
  • 2 Tbsp Vinegar (apple, tangerine or rice vinegar)
  • 1 Tbsp agave
  • 1 Tbsp sake or cooking white wine
  • 1tsp minced ginger
  • 1 Tbsp sugar
  • If you use rice vinegar add 1/2 Tbsp of lemon juice

For the bowl

  • 4C cooked white rice 
  • 1 head sliced lettuce
  • 10 perilla leaves (sliced)
  • 1 carrot (peeled and julienned)
  • 2 Persian cucumber or 1 English cucumber (julienned)
  • Also fresh mix green is good for the bowl without slicing
  • 1# of sushi glade raw fish like tuna, salmon, or yellowtail

Helpful Tips

Most fresh vegetables are good with this recipe. Also you can add Masago, Ikura and Uni too. I always make double amounts of the sauce and use as a dipping sauce for fresh vegetables.
