GALBI JJIM (갈비찜)-

Recipe

  1. At least two hours before cooking the meat soak the defrosted ribs in a bowl filled with the 'For Brine' ingredients
  2. After the ribs have brined for two hours, clean short ribs and place them in a medium pot. Add 2 ½ cups of water and bring the pot to a boil.
  3. Reduce the heat to medium and simmer for 1 hour. While the meat is simmering, make the sauce in a separate bowl by combining all of the 'For Sauce' ingredients and set aside. 
  4. Dice the daikon radish and carrot into large bite size pieces.
  5. Strain the cooked shortribs and but keep the broth the ribs have been cooking in, in a separate bowl. Place the meat in a different mixing bowl and combine with previously made and set aside sauce.
  6. Clean the pot the ribs were cooked in and add back ribs mixed with the sauce and the broth into the pot along with the daikon radish, carrot, and chestnuts. Cook over medium heat.
  7. Stir frequently and cook until the broth is reduced to a thick syrup and vegetables are at your preferred consistency.
  8. Garnish with sliced scallion and toasted sesame seeds.

Ingredients

For Main-

  • 400 g Beef Short Ribs
  • 1/4 of a Daikon radish
  • 1 Medium carrot 
  • 5 Chestnuts (optional)
  • 1 Green onion

For Brine-

  • Cold water to completely cover the meat
  • 1/4 c. Sake or soju
  • 1/2 c. Sprite

For Sauce-

  • 5 Tbsp. Soy sauce
  • 3 Tbsp. Sugar
  • 3 Tbsp. Corn syrup or Agave
  • 3 Tbsp. Mirin
  • 1 Tbsp. Pear juice
  • 1 Tbsp. Chopped scallion
  • 1/3 Tbsp. Minced garlic
  • 1/4 Tbsp. Ginger powder
  • 1/2 Tbsp. Sesame oil
  • Pinch of pepper 

For Garnish-

  • Thin Sliced scallion
  • Toasted sesame seeds

By cleaning the pot the braised short ribs have initially cooked in, before adding the vegetables you can reduce the possibility of tasting any burning of the sugar as the sauce cooks down further.
