DONG GRANG DDANG(동그랑땡)-

Recipe

 

  1. Place the tofu into a cheese cloth and remove the excess water by squeezing the liquid out of the tofu. This process will break the tofu into small crumbles which will mix evenly with the ground meat.
  2. Finely chop the onion, carrot, green onion, and garlic.
  3. Place all the ingredients 'For Main' into a large mixing bowl and mix well with your hands until all of the ingredients are evenly incorporated.
  4. Make the patties by taking some of the meat in your hand and rolling it into a medium-small ball. 
  5. Once all of your meat has been rolled into balls, flatten them between your hands to make into little mini patties. The patties should be about a half inch thick.
  6. Prepare a coating station next to your stove by filling two shallow bowls – one with the flour and salt and the other with beaten eggs. Start heating the pan over medium heat with about two teaspoons of oil.
  7. Dip the patties in to the flour first then the egg. I recommended coating several patties at a time so that you can put the patties in the pan right after another.
  8. Once the oil is hot, add the flour and egg coated patties into the pan. Cook until the patties are firm or springy when pressed – this means they are fully cooked.

Ingredients

For Main-

  •  1/2 lb Ground beef (you can also use 1/4 lb ground beef + 1/4 lb ground pork)
  • 4 oz Extra firm tofu (this is about 1/4 of a standard 14 to 15 oz tofu package)
  • 1/4 c. Diced Onion
  • 1/4 c. Diced Carrot
  • 1 Tbsp. Chopped Green onion
  • 1/2 Tbsp. Chopped Garlic
  • 1 Tbsp. Salt
  • 1 Tbsp. Cooking rice wine or mirin
  • 1 Tbsp. Soy sauce
  • 1/2 Tbsp. Sesame oil
  • 1 Egg 
  • Salt and black pepper to taste
  • 1 Diced Korean Chili pepper (option)
  • 2 Diced Shiitake Mushroom (option)


 

For Coating-

  • 1/4 c. Flour
  • 2 Beaten Eggs
  • 1 pinch Salt for egg

 Instead of using a cheesecloth you can use a standard kitchen towel to help squeeze the moisture out of the tofu!
