Jorim is simmered Korean dish, made by boiling vegetable, meat, fish, or tofu in seasoned broth until the liquid is absorbed into the ingredients.
Also known as Braised Cod, this dish is normally served with steamed rice.
Main -
6-7oz Cod 4 pieces (Thick Steak size)
2 medium potatoes
1/2 sweet onion
2 stems green onion
Small piece of ginger
Marinated seasoning -
2 Tbsp Mirin, soju or white wine
1/2 Tbsp salt
Pinch of black pepper
1 tsp grated ginger
Sauce -
1.5 C water or kelp broth
6 Tbsp soy sauce
2 Tbsp Korean chili powder (gochu garu)
1.5 Tbsp sugar
2 Tbsp Mirin, sake or soju
1 Tbsp minced garlic
Garnish and more
1-2 Korean red pepper
1/2 Tbsp sesame oil
1/2 Tbsp plum syrup or agave
Pinch of sesame seed
1 hour
30 minutes
1.5 hour
2-3 people
How to make kelp broth?
In a clean jar add 4 cups cold water and 1 oz kelp. Put it in the refrigerator overnight or 10 hours. Strain the broth and use for noodle soup or base of Korean egg soufflé . For the best flavor, use within 3 days.
