Chive Pancake- 부추전

chive Pancake, Buchujeon is Korean savory pancake. It serves as a appetizer or Anju(food consumed with alcohol) for Makgeolli.  Savory pancakes are a big part of Korean home cooking. You can use Kimchi, seafood, beef, green onion, potato and many more for the pancake.   

Recipe

  1. Cut Chinese chives or garlic chives into about 2" length. (before you cut clean well!)
  2. Thinly slice the onion. (thinly slice green onion if you have some)
  3. Make the batter. Add 1C of pancake mix and 3/4 C sparkling water (if you don't have sparkling water, use just water and add 1 or 2 cubes of ice for extra crispy)
  4. Mix the batter well and add 1T of fish sauce in a large bowl. The batter should be little thick.
  5. Combine chives and onion with the batter.
  6. Heat a non stick pan over medium - high heat.
  7. Add 1-2T of oil to the hot pan and swirl it around to coat it. Wait until the temperature of the oil is ready to cook. 
  8.  Reduce the heat to medium high heat. Scoop out the  batter with a big spoon  and spread it evenly and thinly around the pan.
  9. Move the pan in circular motion for even cook.
  10. Turn the pancake over when you see the top of pancake partially cooked. Cook until golden brown both side. (about 3-5 minutes each side)
  11. For this recipe, you can make 4 medium size pancakes.
  12. Make dipping sauce if you need it. it is pretty good with the sauce and without the sauce. 

Ingredients

  • 1 C Korean Pancake Mix (buchimkaru) 

           or 1 C AP flour add 1 tsp salt 

            ( instead of pancake mix) 

  • 3/4 C Sparkling water 
  • 3.5 oz Chinese chive, garlic chive or Korean chive 
  • 1/2 sweet medium or small onion (thin sliced) 
  • 1 Tbsp Fish sauce 
  • Oil to cook

        

  Dipping sauce (if you need it)

  • 1 Tbsp soy sauce 
  • 1 tsp rice vinegar  
  • 1 Tbsp water 
  • 1/2 tsp sugar 
  • Pinch of Korean chili powder

Korean chive is thiner than Chinese chive, so taste better.

 If you can't fine those chive, just use chive with green onion.
