Bossam is boiled pork traditionally served with cabbage wrap and spicy radish salad. In this recipe, I cooked the belly in Korean rice wine(Makgeolli) instead of flavor water. The wine makes the meat tender and gets rid of the meat smell.
Instructions
For pork-belly
-1.5 # Slab pork belly with skin
-2 C of Makgeolli (Korean rice wine)
-1/4 C soy sauce
-Salt & pepper for season the belly
-Grape oil or vegetable oil
Ssamjang(Korean BBQ dipping sauce)
-1 Tbsp Doenjang(Korean soybean paste)
-1/2 Tbsp Gochujang (Korean chili paste)
-1/2 Tbsp minced garlic
-2 Tbsp water
-1/2 Tbsp sugar
-1 tsp sesame oil
For serving
- Lettuce or Napa cabbage
- Perilla leave
